Preventing Food Poisoning in Catering: The Main Causes and How to Stop Them
Food poisoning is almost always preventable. It comes from a short list of causes, and each has a well-understood control. Learn the causes and the controls and you can stop it before it starts — which is the whole point of food hygiene training.
Every year in Ireland, thousands of cases of food-borne illness are reported, and many more go unrecorded. Behind most of them is a small number of causes that catering training is specifically designed to prevent. Understanding how food poisoning happens is the key to stopping it.
The bacteria that cause most illness
Most bacterial food poisoning in a catering setting is caused by a handful of organisms:
- Salmonella — associated with poultry, eggs and raw meat
- Campylobacter — the most common cause of bacterial food poisoning, linked especially to raw and undercooked poultry
- E. coli O157 — linked to undercooked minced beef and cross-contamination, and dangerous even in tiny doses
- Listeria monocytogenes — grows even at fridge temperatures and is a particular risk in ready-to-eat foods
- Clostridium perfringens and Bacillus cereus — linked to food cooked in bulk and held or cooled badly
What bacteria need to grow
Bacteria need four things: food, moisture, warmth and time. High-risk foods — cooked meat, poultry, dairy, cooked rice, sauces and anything ready-to-eat — provide the nutrients and moisture. Remove the warmth (temperature control) or the time (don’t leave food standing) and multiplication stops. This is why the danger zone of 5 °C to 63 °C sits at the heart of food safety.
The four routes of contamination — and the four controls
Harmful bacteria reach food in four main ways, remembered as the four Cs:
- Cross-contamination — bacteria spread from raw food, hands, cloths or equipment to ready-to-eat food. Control it by separating raw and ready-to-eat, using separate equipment, and washing hands.
- Cleaning — dirty surfaces and equipment harbour bacteria. Control it with clean-as-you-go and proper disinfection.
- Chilling — food left warm lets bacteria multiply. Control it by keeping cold food at 5 °C or below.
- Cooking — undercooked food leaves bacteria alive. Control it by cooking thoroughly, aiming for a core temperature of 75 °C (or an equivalent time-temperature combination).

Cooking, cooling and reheating
Thorough cooking is one of the most reliable ways to destroy bacteria. Food should reach a safe core temperature and, where checked, be verified with a clean probe thermometer. Cooling is just as important: cooked food that is going to be chilled should be cooled quickly — ideally within about 90 minutes — and never left standing at room temperature. When reheating, food should be heated right through to a safe temperature, and reheated only once.
Most outbreaks are not caused by exotic failures. They are caused by ordinary food, cooked or cooled or stored just slightly wrong, by someone who was never shown the reason it matters.
The role of the food handler
Equipment and procedures help, but food poisoning is ultimately prevented by trained people making good decisions dozens of times a shift — washing hands, checking a temperature, separating a board, throwing out food that is past its use-by date. That is why Regulation (EC) 852/2004 ties food safety so firmly to training. A team that understands the causes of food poisoning is a team that prevents it.
